Serves: 4–5
Ingredients
- 4 large bell peppers (any color), tops cut and seeded
- 1 lb lean ground turkey
- 1 cup cooked quinoa
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomato (canned or fresh)
- 1 tsp smoked paprika
- ½ tsp cumin
- Salt & pepper
- ½ cup shredded low-fat cheese (optional)
- Fresh cilantro for garnish

Instructions
Preheat oven to 375 °F (190 °C).
In a skillet over medium, cook turkey with onion and garlic until turkey is browned;
drain any excess fat.
Add tomato, quinoa, paprika, cumin, salt & pepper. Stir to combine and heat
through.
Place the bell peppers upright in a baking dish, fill each with the turkey/quinoa
mixture.
Top with cheese if using. Cover with foil and bake ~25 minutes. Remove foil and
bake 5 more minutes to melt cheese.
Garnish with cilantro, serve warm.
