Ingredients
- 1 can (15 oz) chickpeas, drained & rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ¼ red onion, diced
- ¼ cup Kalamata olives, sliced
- 2 tbsp parsley, chopped
- Dressing: 3 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp oregano, salt &
- pepper

Instructions
Combine chickpeas, cucumber, tomatoes, onion, olives, parsley in bowl.
Whisk dressing ingredients, pour over, toss. Serve or chill.
