Ingredients
- 1 bunch kale, stems removed, chopped
- 1 cup cooked quinoa (cooled)
- ½ cup chickpeas (canned, rinsed)
- ½ red bell pepper, diced
- ¼ red onion, thinly sliced
- 2 tbsp sunflower seeds or sliced almonds
- Dressing: 3 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tsp Dijon mustard, salt & pepper

Instructions
In a large bowl, massage kale lightly with a pinch of salt until softened.
Add quinoa, chickpeas, bell pepper, onion, seeds.
Whisk dressing ingredients, pour over salad, toss well. Serve.
