Cauliflower Rice with Herbs

Healthy, light side dish
Serves: 4

Ingredients

  • 1 head cauliflower, cut into florets
  • 1 tbsp olive oil
  • 1 small onion, minced
  • 1 small onion, minced
  • 1 clove garlic, minced
  • ¼ cup fresh parsley, chopped
  • Juice of half lemon
  • Salt & pepper

Instructions

Pulse cauliflower florets in a food processor until rice-like.

In a large pan, heat olive oil, sauté onion + garlic until translucent.

Add cauliflower rice, cook ~5 min, stirring, until just tender.

Remove from heat, stir in parsley, lemon juice, salt & pepper.
