Makes: 8 cups
Ingredients
- 2 cups rolled oats
- 1 tsp baking powder
- 1 tsp cinnamon
- Pinch salt
- 1 cup milk (or plant milk)
- 1 large egg (or flax egg)
- 2 tbsp maple syrup or honey
- 1 cup mixed berries (fresh or frozen)

Instructions
Preheat oven to 350 °F (175 °C). Grease a muffin tin.
In a bowl, mix oats, baking powder, cinnamon, salt.
In another bowl, whisk milk + egg + syrup.
Combine wet + dry, fold in berries.
Divide into muffin cups, bake ~25–30 min until set.
