Kale & Quinoa Power Salad

Ingredients

  • 1 bunch kale, stems removed, chopped
  • 1 cup cooked quinoa (cooled)
  • ½ cup chickpeas (canned, rinsed)
  • ½ red bell pepper, diced
  • ¼ red onion, thinly sliced
  • 2 tbsp sunflower seeds or sliced almonds
  • Dressing: 3 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tsp Dijon mustard, salt & pepper

Instructions

In a large bowl, massage kale lightly with a pinch of salt until softened.

Add quinoa, chickpeas, bell pepper, onion, seeds.

Whisk dressing ingredients, pour over salad, toss well. Serve.
