Ingredients
- 3 medium zucchini, spiralized
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp grated Parmesan (or plant-based alternative)
- Salt & pepper
- Fresh parsley, chopped

Instructions
In a large skillet over medium, heat olive oil, sauté garlic ~30 sec until fragrant.
Add zucchini noodles, toss for 2–3 min (don’t overcook, want “al dente”).
Remove from heat, stir in Parmesan, salt & pepper. Garnish with parsley
